Amaranthus

Also Known As: Amaranth Greens, Amaranthus Leaves, Keerai, Harive Soppu, Thota Kura

Amaranthus is a traditional leafy vegetable valued for its tender leaves, fresh green colour and distinctive flavour. It is commonly used in Indian home cooking and can be prepared as a simple leafy vegetable, dal or curry.

Our Amaranthus is sourced from various farming families in and around Bengaluru, Karnataka, following traditional and indigenous farming practices. The actual farmer, growing area, variety and harvest characteristics may vary depending on the season and availability.

As a fresh leafy vegetable, Amaranthus is naturally delicate and has a shorter shelf life than many root and tuber vegetables.

Benefits of Using

Amaranthus leaves naturally provide:

  • Dietary fibre, as part of a balanced diet.
  • Vitamin A precursors, including carotenoids naturally present in green leafy vegetables.
  • Vitamin C in varying amounts.
  • Vitamin K, naturally present in leafy greens.
  • Folate (vitamin B9).
  • Minerals such as iron, calcium and magnesium in varying amounts.
  • Naturally low in fat and calories.

These are general nutritional characteristics and are not medical claims.

Common Uses

Amaranthus can be used in many traditional preparations:

  • Amaranthus poriyal
  • Keerai masiyal
  • Keerai dal
  • Amaranthus curry
  • Sambar
  • Soups
  • Stir-fried leafy vegetables
  • Keerai kootu
  • Traditional leafy-green preparations
  • Mixed with other vegetables or lentils

The tender leaves and suitable soft stems can be cooked together depending on the variety and preparation.

Natural Freshness & Shelf Life

Amaranthus is a delicate, high-moisture leafy vegetable. It naturally has a shorter shelf life than vegetables such as potatoes, onions or carrots.

After harvesting, the leaves may naturally:

  • Lose moisture
  • Become less crisp
  • Wilt
  • Develop slight yellowing
  • Show minor leaf damage
  • Become soft if exposed to excess moisture

Warm temperatures can cause leafy vegetables to lose freshness particularly quickly.

Why Amaranthus May Spoil Faster

Leafy vegetables naturally deteriorate faster because their leaves contain considerable moisture and continue to lose water after harvesting.

Amaranthus may spoil faster when:

  • Kept at room temperature for an extended period
  • Stored while excessively wet
  • Packed too tightly with trapped moisture
  • Exposed to heat
  • Physically crushed during handling
  • Stored for too long after harvesting

We rely on careful harvesting, handling and natural storage practices, rather than chemical preservatives to artificially extend the shelf life of fresh vegetables.

Storage

For better freshness:

  • Refrigerate Amaranthus as soon as possible after delivery.
  • Remove visibly damaged or spoiled leaves.
  • Avoid washing the entire bunch before storage.
  • If the leaves are wet, gently remove excess moisture before refrigeration.
  • Wrap loosely in a clean, breathable material or suitable vegetable bag.
  • Avoid tightly sealing wet leafy vegetables, as trapped moisture can encourage deterioration.
  • Wash thoroughly just before cooking.
  • Use leafy vegetables as early as possible for the best freshness and texture.

Natural Variation

Naturally grown Amaranthus may vary in:

  • Leaf size
  • Leaf shape
  • Green colour intensity
  • Stem thickness
  • Tenderness
  • Bunch size
  • Leaf texture
  • Aroma
  • Natural moisture content

These differences can occur according to variety, season, soil, weather, maturity and harvesting conditions.

Replacement Policy

Generally, fresh leafy vegetables are not eligible for replacement because of normal natural variation or ordinary spoilage after delivery.

Differences in leaf size, colour, stem thickness, bunch size and natural appearance are considered normal characteristics of fresh Amaranthus.

If there is a genuine quality issue that was already present at the time of delivery, please provide clear photographs and the relevant order details. The matter can be reviewed on a case-by-case basis.
