Sun-Dried Buttermilk Chillies, traditionally known as Challa Mirapakayalu, are a classic Indian preparation made by soaking green chillies in a seasoned buttermilk mixture and then sun-drying them naturally.
Our preparation uses Desi Cow Curd, Green Chilli, Turmeric Powder, Himalayan Rock Salt and Lemon. The chillies are traditionally prepared and dried under the sun, developing a distinctive tangy, salty and spicy character.
They are usually fried in hot oil and served as a crispy accompaniment with rice and traditional meals.

We use traditional/indigenous varieties of grains and agricultural ingredients wherever applicable. Our ingredients are sourced through various farming families and agricultural sources in India.
We prefer naturally handled ingredients and do not intentionally adulterate our products or add undeclared ingredients.
The actual farming/source may vary from batch to batch depending on seasonal availability and sourcing.
We do not represent the product as certified organic unless the applicable certification is available.
Traditional Preparation
Fresh green chillies are prepared and combined with Desi Cow Curd, Turmeric Powder, Himalayan Rock Salt and Lemon.
The chillies are then traditionally sun-dried, allowing them to lose moisture naturally. Once thoroughly dried, they are packed for storage and later frying.
The drying time can vary depending on sunlight, humidity and weather conditions.
How to Prepare
- Heat cooking oil properly.
- Add the required quantity of dried Buttermilk Chillies.
- Fry briefly until they become crisp and lightly browned.
- Remove and drain excess oil.
- Serve as an accompaniment with your meal.
They can be quite spicy and salty, depending on the chilli variety and batch.

Challa Mirapakayalu are traditionally served with:
- Rice and dal
- Sambar rice
- Rasam rice
- Curd rice
- Vegetable meals
- Traditional South Indian meals
They can also be served as a crispy side dish.

These variations can occur between batches because of the natural ingredients, chilli variety and drying conditions.
Storage & Storage Pests
Because this is a naturally dried food product, proper storage is important.
Warm and humid conditions can sometimes lead to storage insects or pests in dried food products. The presence of an occasional storage pest does not automatically mean that the product has been adulterated.
We prefer natural handling and storage practices rather than relying on chemical pest-control treatments to prevent every possible storage insect.
For best storage:
- Store in a clean, completely dry, airtight container.
- Keep away from moisture and humidity.
- Store in a cool, dry place.
- Keep away from direct sunlight and heat.
- Always use a clean, dry spoon or utensil.
- Do not allow water or moisture to enter the container.
About Fungus & White Worms
Exposure to moisture or unsuitable storage conditions can result in fungal growth/mould or insect larvae (white worms).
We generally do not replace the product for normal natural variation or occasional storage insects.
However, if you receive a product showing visible fungus/mould, white worms/larvae or significant deterioration, please contact us with clear photographs and your order details so that we can review the issue.
