Mace, commonly known as Javitri, is the dried reddish-orange lacy covering (aril) surrounding the seed of the nutmeg fruit. It has a warm, sweet, aromatic flavour and is traditionally used in Indian cooking and spice blends.
Mace is usually sold as whole dried blades and can also be ground for use in recipes.

How to Use
Whole mace blades can be added during cooking to release their aroma. They can also be lightly roasted and ground along with other spices when preparing homemade masala.
Because mace has a strong aroma, a small quantity is generally sufficient.

Natural mace may vary slightly in colour, size, thickness, aroma and texture between batches. The dried blades can range from yellowish-orange to reddish-brown depending on the harvest and drying process.

- Store in a clean, dry, airtight container.
- Keep away from moisture and direct sunlight.
- Store in a cool, dry place.
- Use a completely dry spoon or utensil.
- Keep the container properly closed after use.
