Minced Tender Jack Fruit Curry with Mustard seasoning

This is a traditional, ethnic and most served dish of South India. This dish is a must on the menu during auspicious occasions or festivals in South India.

 Ingredients:

  • Raw Jackfruit husk – 2 cups
  • Ginger(1/2 inch), curry leaves(6) and Green chillies(8) paste  – 2 Tsp
  • Tamarind Extract – 2 1/2 Tsp (soak the lemon size tamarind with 3 tsp of water and microwave it for 1 minute and take the extract)

Mustard Paste

  • Mustard seeds- 1 Tsp
  • Red Dry chillies – 2

Tempering

  • Senaga pappu/Chanadal – 1/2 tsp
  • Mena pappu/Urad Dal – 1/2 tsp
  • Aavalu/Mustard Seeds – 1/4tsp(already you have mustard paste, so just be cautious)
  • Jeelakarra/Cumin Seeds – 1/2 tsp
  • Salt to Taste
  • Red Chili Powder – 1/2 tsp
  • Turmeric Powder – 1/4 tsp
  • Oil – 3-4 tsps.
  • Hing -2 pinches

Preparation:

Take a microwave safe bowl, on high power cook the Jackfruit husk by adding 1/4th cup of water. While you are cooking, add 1/4th tsp of Turmeric and cook in oven for about 7 minutes, for every 3 minutes just stir and check the consistency, you do not want to overcook it. Once done, set it to cool.

  • Soak 1 tsp of mustard seeds and 2 red dry chilly in 3-4 tsp water for half hour and using a hand blender, just blend it to a coarse paste.
  • Heat a non-stick pan and add oil to it. When oil is hot all the tempering seeds. Fry till the seeds splutter and seeds change the colour to golden brown that is when add ground chili, curry leaves-ginger paste. Saute for 2 minutes, then add jack fruit husk, mix well and add 3-4 tsp water and set it to boil.
  • Add salt and chilli powder and Fry the curry stirring for few seconds. Add tamarind extract and mix well. Cook the curry covering the pan for 2 minutes.
  • Before off the stove, that is when add the mustard paste to the curry. Saute for 30 seconds not more than that and take it to the serving plate, have it with hot rice. That is all Panasapottu Aava Petti Koora is ready.
